Investigation of adulterants in milk and its products from Lucknow City

Abstract

Milk is a very important product in daily life. Most of the milk and its product sold by local seller’s as well super markets. The branded companies follow FSSAI rule for appropriate quality products in the market. But low level company added certain adulterants to increase the production which may affect the nutritional quality of milk. Therefore, the present study aimed to estimate the adulteration in selected local vendors and food samples including Milk and Curd. Present study also observed starch, microorganism, detergent and acidity in the milk and its products and samples procured from Gomti Nagar and Indira Nagar area of Lucknow. The starch, microorganism, detergent and acidity has been observed in highly significant amount in the collected milk and related samples. Thus, the study clearly brought the fact that foods from local vendors had adulterated samples.
